Limited Release Oyster Shell Gin

We created this gin at the request of a third generation oyster farmer using his freshly shucked and cleaned oyster shells.

Made using oyster shell as a botanical, does not taste like oyster, the oyster shell softens the mouthfeel of the gin and coats your mouth more fully as well as giving a subtle brininess. Our own farm grown lemongrass is used as a secondary botanical, working in perfectly with the flavour profile.

Great paired with citrus for garnish (yuzu if you can find it) and soda, or makes an amazing dirty martini replacing the olive and olive brine with a freshly shucked oyster and its brine.

Needless to say Oyster shell has been used in the creation of this gin.
