Demoiselle Smoked Absinthe a modern Australian style absinthe, distilled with the botanicals aniseed, fennel, wormwood and the Australian native aniseed myrtle then coloured using lemon myrtle alongside the traditional lemon balm and hyssop, lastly it is cold smoked in a process unique to our distillery using select fruit tree wood that adds further depth of flavour to the absinthe.

All of our absinthe is made in the traditional method using whole herbs we grow, as such every year's absinthe is different. The flavour, colour and louche will change.
